Karela ( bitterguard ) Chutney

Karale chutney, also known as Karle chutney, is a flavorful Indian condiment, especially popular in Maharashtra and North Karnataka. It is made primarily from Niger seeds (karale/karle) along with other spices and ingredients. A typical recipe includes roasted Niger seeds, sesame seeds, garlic, dry coconut, red chili powder, curry leaves, tamarind, and salt. Some variations may also include peanuts, cumin seeds, asafoetida (hing), and sugar.
